How to make homemade tomato preserve, tips

The main ingredient for preparing homemade tomato paste is not so difficult to imagine. However, we would like to provide you with some useful advice in order to be sure of the result.

  • - Buy tomatoes at the market or on offer! In the fruit and vegetable markets, the products are generally fresher, of better quality and more affordable. If you are planning to prepare homemade tomato paste this is the ideal place to shop!
  • - Get help from a friend. Being a rather long process and (let's face it) not exactly fun, getting help from a loved one can make everything faster and lighter. You could divide the costs by preparing a larger dose for two!
  • - Start working on holidays or weekends, so you have time to clean and fix everything.
  • - You can prepare a few more jars, decorate it with ribbons and labels to use it as a homemade Christmas gift.

Homemade tomato preserve: ingredients and necessary

  • - 3 kg of tomatoes of the quality you prefer (S. marzano tomatoes, for example, lend themselves very well to this type of processing).
  • - A bunch of basil.
  • - Sterilized glass jars (you can also recycle the ones you have but even in this case, buy new lids anyway in order to avoid nasty surprises).

Warning: we remind you that the doses are relative and that they depend exclusively on the amount of product you intend to prepare!

How to make tomato paste at home: procedure

  • - Wash the tomatoes thoroughly (in fresh water and baking soda would be ideal to remove any traces of soil or pesticides).
  • - Avoid using bruised, rotten tomatoes or removing any deformities with a knife together with the stalks.
  • - Spread out a linen (or cotton) tablecloth and place the washed tomatoes on it so that they dry.
  • - Cut the tomatoes in half and remove the seeds.
  • - In a fairly large pot, pour the tomatoes and cook for about 5-6 minutes over low heat. They should be soft, losing their original consistency.
  • - Use a vegetable mill to make the tomato paste smooth and velvety.
  • - Check that the consistency of the tomato puree is quite full-bodied. If it is too liquid, cook it for a few more minutes. (be careful not to burn it!).
  • - At this point all that remains is to pour the puree into previously sterilized glass jars and add basil leaves to taste.
  • - Remember not to fill the jars to the brim but to leave about 3 cm of empty space.
  • - After the cooking time, leave the jars containing the tomato paste in their own water, until it cools down.
  • - Once the jars cool down, dry them and check for the vacuum seal (just press the cap and hear the click). If the vacuum does not have formed (therefore you do not hear any click when pressing the cap), boil it for another 30 minutes.
  • - Your tomato paste is ready to be placed in the pantry and enjoyed during the colder months!
